When I try and type notes in paper space the text always comes out huge. Is this because the text still thinks that it is at 20 or 30 scale? How do you adjust it so it is at 1:1?

Model Space and Layout Space are two separate spaces. Each is at its own scale. Text in both is sized according to the scale set for that space.

Unfortunately, I know of no way to set the scale in Model Space and then set another scale in Layout Space. You'll need to reset the scale as needed. This becomes less of a problem as the work flow becomes more standard.

To set the scale, click on the plumb bob icon (Assistant), Set Program Defaults, General, to set the Drawing Scale Factor.
